  1. Preheat your oven to 180°C (350°F) and line a 9 x 9-inch baking dish with baking paper.
  2. Grate the zucchini and carrot into a colander, sprinkle with salt, and let sit for about 10 minutes.
  3. In a frying pan over medium heat, warm olive oil and sauté diced onion and bacon for 5-7 minutes until golden and fragrant. Let it cool.
