  • 1 cup Sour Cream At room temperature
  • 1 teaspoon Vanilla Extract Pure recommended
  • 1 pinch Salt
  • 3 large Eggs At room temperature

  • 8 ounces Semi-sweet Chocolate
  • 1 cup Heavy Cream

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and prepare your baking pan with parchment paper.
  2. Cut shredded kataifi dough into smaller pieces and mix with melted butter, pistachio cream, and tahini. Reserve half for topping.
  3. Press half of the kataifi mixture into the bottom of the baking pan and bake for about 15 minutes until golden brown.
  4. In a mixing bowl, beat cream cheese until smooth. Gradually add sugar, then sour cream, vanilla, salt, and eggs, mixing gently.
  5. Pour the cheesecake filling over the cooled crust and top with reserved kataifi mixture. Bake for about 25 minutes.
  6. Heat heavy cream until simmering, pour over chocolate, and stir until smooth. Pour ganache over cooled bars and refrigerate.
  7. Allow to cool completely and chill for at least 2 hours before slicing into squares to serve.
