  • 1 teaspoon Baking Powder Essential leavening agent.

  • 1 cup Non-Dairy Milk Almond, soy, or oat milk work well.
For the Mousse Layer
  • 1 can Coconut Cream Key for achieving fluffy mousse texture.
  • 1 cup Chocolate Chips Opt for dark chocolate for richer flavor.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Grease and line a springform pan with parchment paper.
  2. In a mixing bowl, whisk together gluten-free flour, cocoa powder, and granulated sugar until well combined.
  3. In another bowl, combine non-dairy milk and unsweetened applesauce, blending until smooth. Pour this into the dry ingredients and stir gently.
  4. Transfer the batter to the prepared springform pan.
  5. Bake for 25–30 minutes or until a toothpick comes out clean. Let it cool completely.
  6. Melt coconut cream and chocolate chips in a heatproof bowl over simmering water until smooth. Let cool for about 10 minutes.
  7. Whip the chilled coconut cream until soft peaks form, then fold it into the cooled chocolate mixture.
  8. For the ganache, melt remaining chocolate chips with a small amount of coconut cream until silky smooth.
  9. Layer the mousse over the cooled cake, then pour the ganache on top, allowing it to cascade down the sides.
  10. Cover and refrigerate for at least 3 hours or until set.
  11. Release the springform pan and slice the cake to serve.
