Preparation
- Preheat the oven to 350°F (175°C). Grease and line a springform pan with parchment paper.
- In a mixing bowl, whisk together gluten-free flour, cocoa powder, and granulated sugar until well combined.
- In another bowl, combine non-dairy milk and unsweetened applesauce, blending until smooth. Pour this into the dry ingredients and stir gently.
- Transfer the batter to the prepared springform pan.
- Bake for 25–30 minutes or until a toothpick comes out clean. Let it cool completely.
- Melt coconut cream and chocolate chips in a heatproof bowl over simmering water until smooth. Let cool for about 10 minutes.
- Whip the chilled coconut cream until soft peaks form, then fold it into the cooled chocolate mixture.
- For the ganache, melt remaining chocolate chips with a small amount of coconut cream until silky smooth.
- Layer the mousse over the cooled cake, then pour the ganache on top, allowing it to cascade down the sides.
- Cover and refrigerate for at least 3 hours or until set.
- Release the springform pan and slice the cake to serve.
