Method
 

Step-by-Step Instructions
  1. In a medium bowl, combine the flour, baking powder, and salt. Whisk until well-blended.
  2. In a large bowl, beat the butter until smooth. Gradually add the sugar and mix until fluffy.
  3. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. Gradually combine the flour mixture with the wet ingredients, mixing on low speed until just combined.
  5. Divide the dough into three portions, color one red and one blue, leaving one plain.
  6. Shape each colored dough into rectangles and wrap in plastic wrap. Refrigerate for at least 30 minutes.
  7. Roll each portion out into rectangles, stack them, and press gently together.
  8. Roll the dough tightly into a log shape. Wrap and refrigerate for at least 2 hours.
  9. Preheat your oven to 375°F (190°C) and line baking sheets with parchment paper.
  10. Slice the log into 1/4-inch rounds. Optionally roll edges in sugar or sprinkles.
  11. Bake for 8 to 10 minutes until the edges are set and the centers are soft.
  12. Cool cookies on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
