  • 2 large sweet onions Vidalia or Walla Walla recommended
  • 2 cups cheddar cheese, shredded Freshly grated is preferred
  • 1 tablespoon ranch seasoning Can substitute with Cajun spice or red pepper flakes
For Dipping
  • 1 cup ranch sauce or marinara sauce for dipping

Method
 

Directions
  1. Preheat your oven to 375°F (190°C) and line two baking sheets with greased parchment paper.
  2. Peel and slice sweet onions into thin rounds, about 1/8-inch thick, and pat dry.
  3. On each baking sheet, create piles of shredded cheddar cheese, placing an onion round on top of each pile.
  4. Dust lightly with cornstarch, smoked paprika, and sprinkle with ranch seasoning.
  5. Bake for 11-13 minutes until the cheese is bubbly and the edges turn golden brown.
  6. Remove from the oven and let them cool for 5-7 minutes on the baking sheet.
  7. Serve immediately with your favorite dipping sauce.
