Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan with oil and line with parchment paper for easy removal.
  2. Grate a medium-sized zucchini and squeeze out moisture using a clean kitchen towel.
  3. Combine all-purpose flour, baking powder, fine sea salt, garlic powder, onion powder, black pepper, and smoked paprika in a large bowl.
  4. In a separate bowl, whisk eggs until frothy, then add milk, oil, and honey or sugar. Mix until smooth.
  5. Gently combine wet and dry mixtures with a spatula until just blended.
  6. Fold in squeezed zucchini, cheddar cheese, Parmesan cheese, and chives.
  7. Pour batter into the loaf pan and smooth the top. Optionally, sprinkle more cheddar on top.
  8. Bake in preheated oven for 45-55 minutes, checking for doneness with a toothpick.
