- Bring a medium-sized pot of salted water to a rolling boil. Add the fresh sweet peas and cook for 2-3 minutes until tender. Drain and set aside.
- Immediately rinse the cooked peas under cold water to stop the cooking. Set them aside in a large mixing bowl.
- In the bowl with cooled peas, add crumbled feta, chopped mint leaves, lemon juice, and olive oil. Season with salt and pepper.
- Gently toss all ingredients together without mashing the peas. Taste and adjust seasoning. Serve in a dish.
