  • 2 cups Fresh Sweet Peas fresh is preferable, frozen can be used if thawed
  • 1 cup Feta Cheese can substitute with goat cheese or parmesan
  • 1/4 cup Fresh Mint Leaves use sparingly or substitute with parsley
  • 2 tablespoons Lemon Juice fresh lemon juice recommended
  • 2 tablespoons Extra Virgin Olive Oil high quality improves flavor
  • to taste Salt
  • to taste Black Pepper freshly cracked

Method
 

Step-by-Step Instructions
  1. Bring a medium-sized pot of salted water to a rolling boil. Add the fresh sweet peas and cook for 2-3 minutes until tender. Drain and set aside.
  2. Immediately rinse the cooked peas under cold water to stop the cooking. Set them aside in a large mixing bowl.
  3. In the bowl with cooled peas, add crumbled feta, chopped mint leaves, lemon juice, and olive oil. Season with salt and pepper.
  4. Gently toss all ingredients together without mashing the peas. Taste and adjust seasoning. Serve in a dish.
