Ingredients
  

For the Filling
  • 1 can young green jackfruit in brine Drain and shred
  • 1 cup oyster mushrooms Sliced
  • 1 medium white onion Chopped
  • 4 cloves garlic Minced
  • 1 leaf bay leaf Optional
For the Sauce
  • 2 pieces Chile Ancho Substitute with pasilla if needed
  • 2 pieces Guajillo Chiles Can replace with New Mexico chiles
  • 1 piece Pasilla Chile Substitute with other mild dried chiles
  • 2 pieces Morita Chiles Adjust based on spice preference
  • 2 medium Roma Tomatoes
  • 1 teaspoon allspice
  • 1 teaspoon black peppercorns
  • 1 teaspoon cloves
  • 1 teaspoon cumin seeds
  • 1 stick Ceylon cinnamon
  • 1 tablespoon dried herbs (marjoram, thyme, oregano) Adjust for fresh herbs
  • 2 tablespoons apple cider vinegar Substitute with lime juice if desired
For Assembly
  • 8 pieces corn tortillas Flour tortillas can be used
  • 1 cup vegan cheese Optional
  • 2 tablespoons vegetable oil Can omit for no-oil version
  • 1 cup vegetable broth Substitute with vegan chicken or beef broth

Method
 

Preparation Steps
  1. Prepare Jackfruit: Drain jackfruit, shred and simmer with onion and bay leaf for 10 minutes.
  2. Toast Chiles: Toast dried chiles in a skillet, soak in boiling water for 10 minutes.
  3. Char and Blend Sauce: Char tomatoes, onion, and garlic; blend with soaked chiles and spices.
  4. Sauté Mushrooms and Jackfruit: Sauté mushrooms, combine with jackfruit and sauce; simmer for 25 minutes.
  5. Prepare Tortillas: Warm tortillas, fill with jackfruit mixture, top with cilantro and onion.
  6. For Quesabirrias: Dip tortillas in broth, fill with jackfruit mixture and cheese; cook until crispy.
