Step-by-Step Instructions
  1. In a large mixing bowl, combine softened cream cheese, granulated sugar, and the seeds scraped from two vanilla beans. Using an electric mixer, blend until smooth and creamy.
  2. Incorporate eggs one at a time, mixing on low speed. Add heavy cream and beat until well combined and fluffy.
  3. Preheat your oven to 325°F (160°C) and line a muffin tin with cupcake liners. Pour the cheesecake batter evenly into each liner, filling them about three-quarters full. Bake for 20-25 minutes.
  4. Allow the cupcakes to cool in the oven for about 30 minutes, then refrigerate them for at least 2 hours.
  5. Just before serving, sprinkle a thin, even layer of coarse sugar on top of each cupcake. Use a kitchen torch to caramelize the sugar.
