- In a large mixing bowl, combine softened cream cheese, granulated sugar, and the seeds scraped from two vanilla beans. Using an electric mixer, blend until smooth and creamy.
- Incorporate eggs one at a time, mixing on low speed. Add heavy cream and beat until well combined and fluffy.
- Preheat your oven to 325°F (160°C) and line a muffin tin with cupcake liners. Pour the cheesecake batter evenly into each liner, filling them about three-quarters full. Bake for 20-25 minutes.
- Allow the cupcakes to cool in the oven for about 30 minutes, then refrigerate them for at least 2 hours.
- Just before serving, sprinkle a thin, even layer of coarse sugar on top of each cupcake. Use a kitchen torch to caramelize the sugar.
