Method
 

Cooking Instructions
  1. Rinse the white rice under cold water until clear. Combine rice with water or chicken broth and a pinch of salt in a medium pot. Bring to boil, then reduce to low, cover, and simmer for 15 minutes.
  2. Heat olive oil in a large skillet over medium heat. Add ground beef or turkey, breaking it apart, and cook until browned (7-10 minutes). Drain excess fat if necessary.
  3. Sprinkle in taco seasoning and stir well. Add a splash of water to help the spices meld and simmer for an additional 3-4 minutes.
  4. Open and drain black beans, rinsing them under cold water. Add beans to a pot with a touch of cumin and garlic powder. Simmer for 5 minutes.
  5. Fluff the cooked rice with a fork. In a large bowl, combine rice, black beans, and seasoned meat thoroughly.
  6. Layer with shredded lettuce, diced tomatoes, and cheddar cheese. Drizzle with salsa.
  7. Garnish with fresh cilantro and lime wedges. Serve immediately and enjoy!
