- Rinse the white rice under cold water until clear. Combine rice with water or chicken broth and a pinch of salt in a medium pot. Bring to boil, then reduce to low, cover, and simmer for 15 minutes.
- Heat olive oil in a large skillet over medium heat. Add ground beef or turkey, breaking it apart, and cook until browned (7-10 minutes). Drain excess fat if necessary.
- Sprinkle in taco seasoning and stir well. Add a splash of water to help the spices meld and simmer for an additional 3-4 minutes.
- Open and drain black beans, rinsing them under cold water. Add beans to a pot with a touch of cumin and garlic powder. Simmer for 5 minutes.
- Fluff the cooked rice with a fork. In a large bowl, combine rice, black beans, and seasoned meat thoroughly.
- Layer with shredded lettuce, diced tomatoes, and cheddar cheese. Drizzle with salsa.
