Ingredients
  

For the Salad
  • 1 package Tortellini fresh or frozen
  • 4 cups Fresh Spinach or arugula
  • 1 cup Salami or turkey salami
  • 1 cup Black Olives or capers
  • 1 cup Mozzarella Balls or cubed feta
  • 1 cup Oil-packed Sun-Dried Tomatoes rehydrate if needed
  • 1 cup Fresh Basil Leaves or parsley
For the Dressing
  • 1/4 cup Extra Virgin Olive Oil can substitute with lighter oil
  • 2 tablespoons Balsamic Glaze or vinegar blend
  • 1 teaspoon Dried Oregano or Italian seasoning
  • 1 teaspoon Thyme
  • 2 cloves Garlic minced, can omit
  • 1/2 teaspoon Red Chili Flakes adjust to taste
  • to taste Salt
  • to taste Pepper

Method
 

Preparation Steps
  1. Boil the Tortellini: Bring a large pot of salted water to a boil. Add tortellini and cook according to package instructions, about 3-5 minutes. Drain and transfer to a large mixing bowl.
  2. Prepare the Dressing: In a small bowl, whisk together olive oil, balsamic glaze, oregano, thyme, minced garlic, red chili flakes, salt, and pepper. Set aside.
  3. Combine Tortellini and Dressing: Pour half of the dressing over warm tortellini in the mixing bowl and toss to coat.
  4. Add Remaining Ingredients: Add spinach, salami, black olives, mozzarella, and sun-dried tomatoes to the bowl. Gently fold to combine.
  5. Dress and Serve: Drizzle remaining dressing over the salad and mix gently. Refrigerate if preparing ahead, then toss again before serving.

Notes

For a vegan version, omit salami and mozzarella and use vegan tortellini.
