Preparation Steps
- Boil the Tortellini: Bring a large pot of salted water to a boil. Add tortellini and cook according to package instructions, about 3-5 minutes. Drain and transfer to a large mixing bowl.
- Prepare the Dressing: In a small bowl, whisk together olive oil, balsamic glaze, oregano, thyme, minced garlic, red chili flakes, salt, and pepper. Set aside.
- Combine Tortellini and Dressing: Pour half of the dressing over warm tortellini in the mixing bowl and toss to coat.
- Add Remaining Ingredients: Add spinach, salami, black olives, mozzarella, and sun-dried tomatoes to the bowl. Gently fold to combine.
- Dress and Serve: Drizzle remaining dressing over the salad and mix gently. Refrigerate if preparing ahead, then toss again before serving.

For a vegan version, omit salami and mozzarella and use vegan tortellini.
