Step-by-Step Instructions
  1. Rinse the rice under cold water until the water runs clear. Combine with coconut milk and salt in a pot, bring to a gentle boil, then simmer for 20 minutes until tender.
  2. Stir in sugar and vanilla extract, simmer for an additional 5 minutes until thickened, then cool for 10 minutes.
  3. Cut dragon fruit in half and scoop out the flesh, chop into cubes. Mix some into the pudding.
  4. Fold the chopped dragon fruit into the pudding, transfer to bowls, cover with plastic wrap, and chill for at least 2 hours.
  5. Top each serving with additional dragon fruit cubes, chia seeds, shredded coconut, and mint leaves.
  6. Serve chilled and enjoy!
