  • Pie Crust homemade or store-bought
For the Filling
  • 20 oz Canned Crushed Pineapple or fresh, adjust sugar as needed
  • 1/4 cup White Sugar adjust based on personal taste
  • 1/4 cup Brown Sugar or use only white sugar
  • 1/4 teaspoon Salt balances sweetness
  • 1/4 cup Cornstarch for thickening the filling
  • 1/2 cup Shredded Coconut can be omitted
  • 8 oz Cream Cheese room temperature
  • 1 medium Lime Juice juice of 1 lime
  • 1 medium Lime Zest zest of 1 lime
  • 1 teaspoon Coconut Extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Press your pie crust into a pie dish, trimming excess crust.
  3. In a large mixing bowl, combine all the filling ingredients.
  4. Pour the creamy filling into the prepared pie crust and smooth the top.
  5. Bake for 35-40 minutes until bubbly and golden-brown.
  6. Cool on a wire rack at room temperature for at least 30 minutes before serving.
  7. Slice and serve warm or chilled, optionally garnished with ice cream or whipped cream.
