  • 2 medium Zucchini a mix of green and yellow for color
  • 15 oz Ricotta Cheese strained
  • 1/2 cup Parmigiano Reggiano grated, plus extra for topping
  • 8 oz Mozzarella Cheese fresh, for topping
  • 1 large Egg optional for binding
  • 1 cup Fresh Basil & Parsley chopped
  • 2 cloves Garlic minced
  • 1 tsp Salt
  • 1 tsp Pepper
For the Sauce
  • 2 cups Tomato Sauce/Marinara high-quality or homemade

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C).
  2. Slice the zucchini into 1/8-inch thick slices lengthwise.
  3. Sprinkle the sliced zucchini with salt and let rest for 5 minutes. Bake for 1 minute and pat dry.
  4. In a mixing bowl, combine ricotta, 1/2 cup Parmigiano, basil, garlic, egg, salt, and pepper until creamy.
  5. Lay two overlapping zucchini slices and spread 1 tablespoon of the filling, then roll it up and place seam-side down in a baking dish with sauce.
  6. Top with more marinara, sprinkle with mozzarella and remaining Parmigiano. Bake for 25-30 minutes.
  7. Let rest for a few minutes, garnish with fresh basil, and serve.
