Step-by-Step Instructions
  1. Start by microwaving the frozen cauliflower for about 4 minutes, then squeeze out the excess moisture and set it aside.
  2. In a pot, boil water and add the frozen peas and carrots for 3-4 minutes. Drain and mix them with diced yellow onion and green onions, adding soy sauce and oyster sauce.
  3. Heat oil in a pan, scramble the egg for about 2 minutes, then remove and keep warm.
  4. In the same pan, sauté minced garlic and diced onion for 2-3 minutes until translucent, seasoning with salt and pepper.
  5. Increase heat, add cauliflower rice, and stir-fry for about 2 minutes until heated through, then pour in the soy sauce mixture.
  6. Reduce heat, add scrambled egg and cooked veggies. Stir gently for 1-2 minutes and serve warm, garnished with extra green onions.
