- Preheat your oven to 350ºF (175ºC) and prepare a baking pan with cooking spray.
- Cook the hot breakfast sausage in a skillet over medium heat for 7-10 minutes until browned. Drain excess fat.
- In a mixing bowl, combine the cooked sausage, frozen tater tots, shredded cheddar cheese, and shredded mozzarella cheese.
- Whisk together the eggs, milk, salt, pepper, garlic powder, and onion powder in a separate bowl.
- Pour the egg mixture over the tater tot mixture in the baking pan and gently fold together.
- Cover with plastic wrap and refrigerate or bake directly.
- Bake for 60-70 minutes until eggs are set and top is golden brown. Cover with foil if browning too quickly.
- Cool for 10 minutes before serving. Slice and enjoy!
