- In a medium bowl, combine low sodium soy sauce, brown sugar, honey, rice vinegar, mirin, ginger, garlic, gochujang, scallions, and sesame seeds. Whisk until well blended.
- Cut chicken thighs into bite-sized pieces and place them in a large bowl. Pour two-thirds of the marinade over the chicken and mix thoroughly. Cover and refrigerate for at least 30 minutes or up to 4 hours.
- Preheat your grill to medium-high heat, ensuring it is clean and lightly oiled with vegetable oil.
- Soak wooden skewers in water for at least 30 minutes to prevent burning. Thread the marinated chicken onto the skewers.
- Grill the skewers for 6 to 7 minutes on each side, basting with reserved marinade halfway through cooking.
- Once cooked, let the skewers rest for a couple of minutes before serving. Garnish with extra sesame seeds and scallions.
