Step-by-Step Instructions
  1. In a medium bowl, combine low sodium soy sauce, brown sugar, honey, rice vinegar, mirin, ginger, garlic, gochujang, scallions, and sesame seeds. Whisk until well blended.
  2. Cut chicken thighs into bite-sized pieces and place them in a large bowl. Pour two-thirds of the marinade over the chicken and mix thoroughly. Cover and refrigerate for at least 30 minutes or up to 4 hours.
  3. Preheat your grill to medium-high heat, ensuring it is clean and lightly oiled with vegetable oil.
  4. Soak wooden skewers in water for at least 30 minutes to prevent burning. Thread the marinated chicken onto the skewers.
  5. Grill the skewers for 6 to 7 minutes on each side, basting with reserved marinade halfway through cooking.
  6. Once cooked, let the skewers rest for a couple of minutes before serving. Garnish with extra sesame seeds and scallions.
