  • 1 cup Mushrooms Sautéed, any variety like button or shiitake
  • 1 cup Swiss Cheese Can substitute with mozzarella or Gouda
  • 3 large Eggs Act as a binding agent
  • 1 tablespoon Fresh Herbs Such as parsley, basil, or cilantro
For Serving
  • 1 each Greased Pie Plate To keep the pie from sticking

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. Sauté the sliced mushrooms in a skillet over medium heat with a drizzle of olive oil for about 5-7 minutes until tender and golden brown.
  3. In a large mixing bowl, combine the shredded zucchini, sweet corn, sautéed mushrooms, and Swiss cheese. Stir gently until well mixed.
  4. In a separate bowl, crack the eggs and whisk them with a pinch of salt and pepper. Pour the egg mixture into the vegetable mixture and fold gently.
  5. Grease your pie plate with olive oil and pour the mixture into it, smoothing the top with a spatula.
  6. Bake in the preheated oven for about 45 minutes until set in the middle and golden brown on top.
  7. Let the pie cool for about 10-15 minutes before slicing. Serve warm, garnished with fresh herbs.
