  1. In a medium saucepan, combine diced Granny Smith apples, white sugar, cornstarch, and ground cinnamon. Add a splash of water and cook over medium heat for 5–7 minutes until softened. Remove from heat and cool.
  2. Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking pan.
  3. In a large mixing bowl, beat together room-temperature unsalted butter and granulated sugar until fluffy and light in color.
  4. Add Greek yogurt, vanilla extract, and room temperature eggs to the creamed mixture. Mix until combined.
