Ingredients
  

For the Sauce
  • 2 tablespoons Doubanjiang (spicy broad bean paste)
  • 1 teaspoon Sichuan Peppercorns lightly toasted and ground
  • 2 tablespoons Shaoxing Wine or dry sherry
  • 1 cup Low Sodium Chicken Stock or vegetable stock
  • 2 tablespoons Chili Oil adjust to taste
  • 1 tablespoon Dark Soy Sauce
  • 1 teaspoon Chicken Bouillon Powder or vegetable bouillon
  • 1 teaspoon Five Spice Powder
  • 1 teaspoon Granulated Sugar
For the Main Ingredients
  • 1 pound Ground Pork or mushrooms for a vegetarian option
  • 14 ounces Silken Tofu can substitute firm tofu
  • 1 tablespoon Ginger minced
  • 3 cloves Garlic minced
  • 2 tablespoons Green Onions chopped
  • 1 teaspoon Sesame Oil for finishing

Method
 

Step-by-Step Instructions
  1. In a mixing bowl, combine the ground pork with Shaoxing wine, light soy sauce, and minced ginger. Allow to marinate for 10 minutes.
  2. Heat a tablespoon of oil in a wok or skillet over medium heat. Add minced garlic and sauté for about 1 minute.
  3. Add in the marinated ground pork along with doubanjiang. Cook for 4-5 minutes until browned.
  4. Pour in chicken stock, and mix in Sichuan peppercorns, chili oil, bouillon powder, five spice powder, and sugar. Bring to a gentle boil.
  5. Mix cornstarch with water to form a slurry, then stir into the boiling sauce for 2-3 minutes until thickened.
  6. Gently fold in the silken tofu cubes, reduce heat to low and simmer for an additional 2 minutes.
  7. Stir in sesame oil and chopped green onions just before serving. Garnish with more Sichuan peppercorns and green onions.
