Method
 

Step-by-Step Instructions
  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Prepare the salmon by making a slit down the middle of each piece to create a pocket.
  3. Brush the salmon fillets with 1 tablespoon of olive oil and sprinkle salt and pepper on each piece.
  4. Sauté the spinach mixture in a skillet with the remaining olive oil, Italian seasoning, paprika, and cayenne pepper for about 2 minutes.
  5. Remove from heat and mix in chopped roasted red peppers, feta, and grated Parmesan.
  6. Stuff each salmon pocket with the spinach-feta mixture.
  7. Bake in the preheated oven for 12 to 17 minutes until the salmon flakes easily with a fork.
  8. Let the salmon rest for a minute before serving.
