Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and lightly grease an 8x11" baking dish with coconut oil.
  2. In a small bowl, combine the reduced-fat cream cheese, powdered sugar, almond milk, and vanilla extract. Blend until smooth and set aside.
  3. In a large mixing bowl, combine rolled oats, protein powder, baking powder, cinnamon, salt, and chopped strawberries. Stir until evenly mixed.
  4. In another bowl, whisk together almond milk, Greek yogurt, melted butter, whole egg, and egg white until smooth.
  5. Pour the wet mixture into the dry ingredients and stir gently until just combined. Spread uniformly into the prepared baking dish.
  6. Dollop the cream cheese mixture and strawberry preserves on top. Swirl together with a knife for a decorative effect.
  7. Cover the dish with foil and bake for 20 minutes. Remove foil and continue baking for an additional 20-25 minutes, until firm.
