- Preheat your oven to 375°F (190°C) and prepare a baking dish.
- Cut the tops off the bell peppers and remove the seeds, carving jack-o’-lantern faces if desired.
- In a skillet over medium heat, sauté the onion and garlic in olive oil until translucent.
- Add the ground beef, cooking until browned and crumbled, then drain any excess fat.
- Mix in the cooked rice, tomato sauce, salt, pepper, and herbs, cooking for another few minutes.
- Spoon the filling into each bell pepper, pressing gently.
- Cover the baking dish with foil and bake for 25-30 minutes.
- Remove foil, add cheese on top, and bake uncovered for an additional 5-10 minutes.
- Let cool for a few minutes and decorate with additional ingredients before serving.
