For the Topping

Preparation Steps
  1. Preheat your oven to 375°F (190°C) and prepare a baking dish.
  2. Cut the tops off the bell peppers and remove the seeds, carving jack-o’-lantern faces if desired.
  3. In a skillet over medium heat, sauté the onion and garlic in olive oil until translucent.
  4. Add the ground beef, cooking until browned and crumbled, then drain any excess fat.
  5. Mix in the cooked rice, tomato sauce, salt, pepper, and herbs, cooking for another few minutes.
  6. Spoon the filling into each bell pepper, pressing gently.
  7. Cover the baking dish with foil and bake for 25-30 minutes.
  8. Remove foil, add cheese on top, and bake uncovered for an additional 5-10 minutes.
  9. Let cool for a few minutes and decorate with additional ingredients before serving.
