- Slice the fresh king oyster mushrooms into ¼-inch thick pieces. Set aside.
- In a medium bowl, whisk together soy sauce, gochujang, mirin, sugar, minced garlic, and sesame oil.
- Coat the sliced mushrooms thoroughly with the marinade and let them sit for at least 20 minutes.
- Heat a cast-iron pan over medium heat and add a drizzle of neutral oil. Cook the marinated mushrooms in batches for 2-3 minutes on each side until golden brown.
- Return all mushrooms to the pan and pour in any leftover marinade. Cook for an additional 2-3 minutes until the sauce thickens.
- Serve hot over steamed rice and garnish with cucumber, sesame seeds, and scallions.
