Step-by-Step Instructions
  1. In a large mixing bowl, combine ground chicken, finely chopped chipotle peppers in adobo sauce, smoked paprika, ground cumin, garlic powder, onion powder, lime juice, breadcrumbs, and a beaten egg. Mix thoroughly until well-blended.
  2. Divide the mixture into four equal portions and shape them into patties, approximately ¾ inch thick. Make a slight indentation in the center of each patty.
  3. Heat a grill or non-stick skillet over medium heat. Cook patties for about 5 minutes on each side, adding cheese in the last minute if desired.
  4. In a small bowl, mix mayonnaise, additional chipotle pepper, lime juice, and a pinch of garlic powder until smooth for the chipotle mayo.
  5. Remove patties from heat and let them rest. Toast burger buns until golden brown. Assemble burgers with chipotle mayo, lettuce, chicken patty, and toppings.
