- In a large mixing bowl, combine ground chicken, finely chopped chipotle peppers in adobo sauce, smoked paprika, ground cumin, garlic powder, onion powder, lime juice, breadcrumbs, and a beaten egg. Mix thoroughly until well-blended.
- Divide the mixture into four equal portions and shape them into patties, approximately ¾ inch thick. Make a slight indentation in the center of each patty.
- Heat a grill or non-stick skillet over medium heat. Cook patties for about 5 minutes on each side, adding cheese in the last minute if desired.
- In a small bowl, mix mayonnaise, additional chipotle pepper, lime juice, and a pinch of garlic powder until smooth for the chipotle mayo.
- Remove patties from heat and let them rest. Toast burger buns until golden brown. Assemble burgers with chipotle mayo, lettuce, chicken patty, and toppings.
