Ingredients

For the Patties
  • 1 lb Ground Chicken 85-90% lean for juiciness
  • 1 tsp Garlic Powder or fresh minced garlic
  • 1 tsp Onion Powder or fresh onions
  • 1 tsp Smoked Paprika or regular paprika
  • 1 tbsp Worcestershire Sauce or soy sauce
  • 1 tsp Kosher Salt or fine sea salt
  • 1/2 tsp Black Pepper freshly cracked preferred
  • 1 small Red Onion can replace with white onion
  • 1 medium Jalapeño or bell pepper for milder flavor
For Cooking
  • 2 tbsp Avocado Oil or olive oil
  • 4 slices Bacon or turkey bacon for a healthier option
For Topping
  • 4 slices Havarti Cheese or mozzarella/cheddar
  • 4 pieces Brioche Buns or whole wheat/gluten-free buns
  • 1/2 cup Garlic Aioli or Mayonnaise or vegan mayo for dairy-free
  • 4 leaves Butter Lettuce or iceberg/leafy romaine

Equipment

  • skillet
  • cutting board
  • Large Bowl

Method

Cooking Steps
  1. Begin by heating a skillet over medium heat, then add slices of bacon. Cook them for about 8-10 minutes, or until they are crispy and golden. Remove and let drain on paper towels.
  2. While the bacon is cooking, slice the jalapeños and red onion into thin, even slices.
  3. In a large bowl, mix the ground chicken with garlic powder, onion powder, smoked paprika, Worcestershire sauce, kosher salt, and black pepper until just combined.
  4. Divide the chicken mixture into four equal portions. Roll each into a ball, then flatten into a 1/2-inch thick patty. Press jalapeños and red onion into the tops.
  5. In the same skillet, heat a drizzle of avocado oil over medium-high heat until it shimmers.
  6. Place the patties jalapeño-side down in the hot skillet and cook undisturbed for about 4 minutes. Flip and cook for another 2-3 minutes. Add a slice of Havarti cheese on top and let it melt.
  7. Toast the brioche buns in a separate skillet or under the broiler for 1-2 minutes until golden brown.
  8. Assemble the burger by spreading garlic aioli on the bottom half of each bun, adding the patty with cheese, crispy bacon, and a piece of butter lettuce on top.
