- Gather all your ingredients. Chop the onion, mince the garlic and ginger, and cut the beef into 1-inch cubes.
- Heat a tablespoon of oil in a pot over medium heat, add onion and sauté for about 5 minutes until golden.
- Stir in minced garlic and ginger, cooking for another minute.
- Add vindaloo paste, turmeric, cumin, and coriander; stir well and toast for 30 seconds.
- Introduce the beef cubes, browning each side for about 2 minutes.
- Pour in vinegar and about 1 cup of water, bring to a gentle boil, then reduce heat and simmer for 45 minutes.
- Stir in garam masala with 10 minutes left, taste and adjust seasoning.
- Serve hot, garnished with fresh cilantro.
