Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease a 9 x 5 inch loaf pan with oil or butter.
  2. Grate fresh zucchini using a box grater and squeeze out excess moisture. Measure 1 packed cup and set aside.
  3. In a medium bowl, combine all-purpose flour, baking powder, baking soda, fine sea salt, and spices. Whisk until well incorporated.
  4. In a large bowl, whisk room temperature eggs until frothy. Gradually add granulated sugar, then stir in oil, yogurt, vanilla, and orange juice until smooth.
  5. Fold the dry mixture into the wet ingredients until no visible dry flour pockets remain; batter will be thick and slightly lumpy.
  6. Gently fold in the grated zucchini, grated carrot, and any optional add-ins.
  7. Pour the batter into the prepared loaf pan and smooth the top. If desired, sprinkle oats and coarse sugar on top.
