- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Toss cubed sweet potatoes with olive oil, cinnamon, and nutmeg in a bowl. Roast until golden and tender for 50-60 minutes.
- Cool sweet potatoes slightly, reduce oven to 375°F (190°C), and grease a 9x13-inch baking dish.
- Mash roasted sweet potatoes with almond milk, vanilla, brown sugar, maple syrup, and spices. Stir in raisins and half the marshmallows.
- Transfer the sweet potato mixture to the baking dish, dot with butter, and scatter remaining marshmallows on top.
- Mix pecans with maple syrup, sprinkle over the sweet potato layer, and bake covered for 15 minutes, then uncovered for another 15 minutes.
- Allow to cool slightly before serving. Scoop portions and enjoy!
