For the Casserole
  • 4 cups Sweet Potatoes cubed, organic recommended
  • 2 tablespoons Extra Virgin Olive Oil coconut oil makes a great substitute
  • 1 teaspoon Ground Cinnamon freshly ground is best
  • 1 teaspoon Ground Nutmeg freshly ground is best
  • 1 cup Almond Milk or any preferred plant-based milk
  • 1 teaspoon Vanilla Extract pure extract recommended
  • 1/4 cup Unsalted Butter or vegan butter for plant-based
  • 1/2 cup Organic Brown Sugar light brown or coconut sugar can be used
  • 1/2 cup Pure Maple Syrup use 100% pure for authenticity
  • 1/2 teaspoon Ground Allspice can substitute with a mixture of cinnamon and nutmeg
  • 1/2 cup Organic Raisins can substitute with dried cranberries
  • 1 cup Marshmallows vegan marshmallows for plant-based
  • 1 cup Raw Pecans or walnuts as alternative
For Optional Topping
  • 1 cup Crumble Topping use oats and brown sugar for a streusel

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Toss cubed sweet potatoes with olive oil, cinnamon, and nutmeg in a bowl. Roast until golden and tender for 50-60 minutes.
  3. Cool sweet potatoes slightly, reduce oven to 375°F (190°C), and grease a 9x13-inch baking dish.
  4. Mash roasted sweet potatoes with almond milk, vanilla, brown sugar, maple syrup, and spices. Stir in raisins and half the marshmallows.
  5. Transfer the sweet potato mixture to the baking dish, dot with butter, and scatter remaining marshmallows on top.
  6. Mix pecans with maple syrup, sprinkle over the sweet potato layer, and bake covered for 15 minutes, then uncovered for another 15 minutes.
  7. Allow to cool slightly before serving. Scoop portions and enjoy!
