- Cream together butter, sugar, and salt until light and fluffy. Add egg, orange zest, orange juice, and lemon extract, mixing until combined.
- Gradually incorporate flour until just combined. Divide dough into disks, wrap in plastic, and chill for at least 1 hour.
- Preheat oven to 375°F (190°C) and line baking sheets with parchment paper.
- Roll out chilled dough to ¼ inch thick. Use cookie cutters to cut shapes and place on baking sheets.
- Bake for 8-10 minutes until lightly golden around edges. Let cool on sheets before transferring to a wire rack.
- While cookies cool, whisk together confectioners’ sugar and milk until smooth. Add food coloring if desired.
- Decorate cooled cookies with icing and allow to set before serving.
