Step-by-Step Instructions
  1. In a mixing bowl, combine plain flour and Greek yogurt until the mixture starts to form a cohesive dough. Knead for 2-3 minutes until smooth.
  2. Cover the dough and let it rest in the refrigerator for 10 minutes to allow the gluten to relax.
  3. Remove the dough and divide it into 4 equal pieces for larger tortillas or 8 for smaller ones. Roll into smooth balls.
  4. Flatten each dough ball and roll it out into a thin circle about ¼ inch thick.
  5. Heat a non-stick skillet over medium-high heat. Cook each tortilla for about 30 seconds until bubbles form, then flip and cook until golden brown.
  6. Remove cooked tortillas and keep them warm under a dishcloth while you cook the remaining pieces.
