Step-by-Step Instructions for S’mores Cookies
  1. In a medium mixing bowl, whisk together 2 cups of all-purpose flour, 1 cup of graham cracker crumbs, 1 teaspoon of baking soda, and ½ teaspoon of salt until well combined.
  2. In a stand mixer, cream together 1 cup of unsalted butter, ¾ cup of light brown sugar, and ½ cup of granulated sugar on medium speed until light and fluffy—about 2-3 minutes.
  3. Add 2 large eggs, one at a time, mixing well after each addition. Then, blend in 1 teaspoon of pure vanilla extract until smooth.
  4. Gradually add the reserved dry ingredients into the creamed mixture, mixing on low speed until just combined.
  5. Gently fold in 1 cup of semisweet chocolate chips, 1 cup of chopped Hershey’s milk chocolate bars, and 1 cup of additional graham cracker pieces.
  6. Using a large cookie scoop, portion out the dough onto parchment-lined baking sheets, wrapping dough around a marshmallow, leaving a small top exposed.
