Instructions
  1. In a medium-sized bowl, add fresh shrimp along with the juice of one lime, minced garlic, and chili powder. Stir well to ensure all shrimp are coated evenly. Allow the shrimp to marinate for 15 to 30 minutes at room temperature.
  2. Heat a skillet over medium-high heat and add a splash of olive oil. Once the oil is shimmering, add the marinated shrimp in a single layer. Cook for 3 to 5 minutes, flipping them halfway through, until they turn pink and opaque.
  3. In a separate bowl, combine diced ripe mango, finely chopped red onion, and freshly chopped cilantro. Squeeze in the juice of another lime, and season with salt and pepper to taste.
  4. Grab your serving bowls and begin layering. Start with generous slices of creamy avocado at the bottom, then arrange the freshly cooked shrimp on top, followed by a heaping spoonful of the zesty mango salsa.
