  • 1 package Puff Pastry thaw overnight in the fridge
  • 0.5 pound Ground Beef lean for healthier option
  • 1 medium Onions finely chopped
  • 1 tablespoon Worcestershire Sauce use cautiously to avoid saltiness
  • 0.5 cup Beef Broth low or no-sodium recommended
  • 1 tablespoon Cornstarch mix with water before adding
  • 1 cup Corn Niblets frozen or fresh
  • 1 cup Peas petite peas preferred
  • 1 teaspoon Dried Thyme or substitute fresh thyme
  • to taste Salt essential for seasoning
  • to taste Pepper essential for seasoning
For the Topping
  • 2 cups Mashed Potatoes leftover mashed potatoes work
  • 1 cup Cheddar Cheese sharp white cheddar recommended

Method
 

Preparation Steps
  1. Preheat your oven to 400°F (200°C) and thaw the puff pastry overnight in the fridge.
  2. In a large skillet, brown the ground beef over medium heat for 5–7 minutes.
  3. Add finely chopped onions to the skillet and cook until translucent, about 3–4 minutes.
  4. Pour in the beef broth and Worcestershire sauce, simmer for 2–3 minutes.
  5. Mix cornstarch with water to create a slurry and stir it into the beef mixture.
  6. Fold in corn niblets, peas, and dried thyme, then season with salt and pepper.
  7. Roll out the puff pastry and cut 24 rounds with a 2.5-inch biscuit cutter.
  8. Press each round into a mini muffin tin and fill with a teaspoon of beef mixture.
  9. Top each bite with mashed potatoes and sprinkle cheddar cheese on top.
  10. Bake for 15–18 minutes until golden brown and the filling is heated through.
  11. Allow the bites to cool for a few minutes before serving.
