- Preheat your oven to 400°F (200°C) and thaw the puff pastry overnight in the fridge.
- In a large skillet, brown the ground beef over medium heat for 5–7 minutes.
- Add finely chopped onions to the skillet and cook until translucent, about 3–4 minutes.
- Pour in the beef broth and Worcestershire sauce, simmer for 2–3 minutes.
- Mix cornstarch with water to create a slurry and stir it into the beef mixture.
- Fold in corn niblets, peas, and dried thyme, then season with salt and pepper.
- Roll out the puff pastry and cut 24 rounds with a 2.5-inch biscuit cutter.
- Press each round into a mini muffin tin and fill with a teaspoon of beef mixture.
- Top each bite with mashed potatoes and sprinkle cheddar cheese on top.
- Bake for 15–18 minutes until golden brown and the filling is heated through.
- Allow the bites to cool for a few minutes before serving.
