Cooking Steps
  1. Preheat the oven to 400°F (200°C) and prepare a large baking sheet by greasing it lightly.

  3. Peel and chop the sweet potatoes, toss with olive oil and half of the seasoning blend, then spread on the baking sheet and roast for 15-20 minutes.
  4. Cook the ground beef in a skillet over medium-high heat for about 7 minutes until browned, then drain excess fat.
  5. Add black beans and remaining seasoning to the skillet, cook for another 3-5 minutes.
  6. Assemble the taco bowls with roasted sweet potatoes, beef mixture, toppings like tomatoes, corn, and avocado.
  7. Garnish with parsley, lime juice, and sour cream or Greek yogurt, then serve immediately.
