For the Meatloaf
  • 2 lbs Ground Beef (80/20) Substitute with ground turkey for a leaner option.
  • 1/2 cup Breadcrumbs Using Italian seasoned breadcrumbs adds extra flavor.
  • 2 large Eggs Acts as a binder.
  • 1/2 cup Milk Adds moisture.
  • 1 small Onion, finely chopped Shallots can be used for a milder flavor.
  • 3 cloves Garlic, minced
  • 2 tablespoons Worcestershire Sauce
  • 1 tablespoon Tomato Paste
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Dried Basil
  • 1 1/2 cups Shredded Mozzarella Fresh mozzarella can also be used.
  • Chopped Parsley Optional.
For the Glaze
  • 1/3 cup Ketchup
  • 2 tablespoons Brown Sugar
  • 1 tablespoon Balsamic Vinegar

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and prepare a baking sheet or loaf pan with nonstick spray.
  2. In a large mixing bowl, combine ground beef, breadcrumbs, eggs, milk, onion, garlic, Worcestershire sauce, tomato paste, salt, pepper, oregano, and basil. Mix gently.
  3. Shape half of the meat mixture into a loaf and create a trench down the center.
  4. Fill the trench with shredded mozzarella, then cover with the remaining meat mixture.
  5. In a small bowl, whisk together ketchup, brown sugar, and balsamic vinegar, then brush on top of the meatloaf.
  6. Bake in the preheated oven for 50-60 minutes until the internal temperature reaches 160°F (71°C).
  7. Remove from oven and let it rest for 10 minutes before slicing.
  8. Slice and serve warm with your favorite sides.
