  • 8 oz Cream Cheese Neufchâtel cheese is a lower-fat substitute
  • 3/4 cup Parmesan Cheese, grated Pecorino Romano can be used
  • 1/2 cup Gruyère Cheese, shredded Substitute with Fontina or mozzarella
  • 1 unit Egg, beaten Acts as a binder

Method
 

Preparation
  1. Preheat your oven to 350°F (180°C) and line a baking tray with parchment paper.
  2. Warm olive oil and butter in a skillet over medium heat, add diced onion and sauté for 5 minutes until soft.
  3. Add minced garlic and sliced cremini mushrooms to the skillet and cook for 8 minutes.
  4. Stir in fresh thyme, salt, and pepper, cooking until any residual liquid is absorbed.
  5. Mix in cream cheese, grated Parmesan, and optional Dijon mustard until melted and smooth.
  6. Allow the mixture to cool slightly, then stir in the beaten egg.
  7. Unroll puff pastry sheets and cut diagonal strips along each side, leaving the center intact.
  8. Spoon the cooled filling into the pastry center, fold ends over, and braid the strips over the filling.
  9. Transfer to the baking tray, brush the top with beaten egg for a golden finish.
  10. Bake for 20-22 minutes until golden brown, then allow to rest for 10 minutes before slicing.
