- Crumble the cotija cheese and set aside. Thinly slice scalions, chop cilantro, and finely mince jalapeño. Mince garlic.
- Heat a skillet over high heat, add oil, then corn and salt. Cook undisturbed for 2 minutes for initial char, then stir and continue cooking for 8 minutes until well caramelized.
- In a bowl, whisk together mayonnaise, lime juice, chili powder, smoked paprika, and cumin until creamy.
- Transfer charred corn to a bowl. Combine with dressing, scallions, cilantro, jalapeño, and garlic. Fold gently.
- Taste and adjust seasoning with more salt or chili powder if needed. Serve warm.
