  • 0.5 cups soy sauce consider using tamari for gluten-free option
  • 0.25 cups water
  • 2 tablespoons honey or equivalent sweetener
  • 1 medium onion diced; use shallots for milder flavor
  • 1 bunch green onion chopped; use chives or leeks as substitutes
  • 2 cloves garlic minced; garlic powder can be used
  • 2 pieces chili peppers diced; substitute any hot pepper or chili flakes
  • 1 tablespoon toasted sesame seeds can be omitted

  • 4 large eggs room temperature
  • 2 teaspoons salt for boiling; can substitute with baking soda
  • 2 tablespoons white vinegar or rice vinegar

Method
 

Preparation
  1. In a medium bowl, combine soy sauce, water, and honey, whisking until honey dissolves. Add onion, green onion, garlic, chili peppers, and sesame seeds; mix well.
  2. Bring a pot of water to a boil and add salt and vinegar. Lower room temperature eggs gently into the water. Cook for 6 minutes.
  3. Transfer cooked eggs to an ice water bath and let cool for 5-10 minutes.
  4. Gently tap cooled eggs on a hard surface to crack shells, then peel under running water and place in marinade.
  5. Cover and refrigerate eggs for at least 6 hours or overnight to marinate.
  6. When ready to serve, remove eggs from marinade, slice in half, and serve over rice or noodles with garnishes.
