Step-by-Step Instructions
  1. Prep Grill: Preheat your grill to create indirect heat. Set one side to high and the other to low, aiming for around 350°F (175°C).
  2. Spice Mix: In a bowl, combine paprika, garlic powder, onion powder, salt, and black pepper. Mix until well blended.
  3. Smoke Wings: Toss wings in the spice mix, coating evenly. Place on the cooler side of the grill, close the lid, and smoke for about 1 hour or until they reach 165°F (74°C).
  4. Prepare Glaze: Melt butter in a small saucepan over low heat, remove from heat, and whisk in hot sauce to taste until combined.
  5. Grill: Move wings to the hotter side, brush with glaze, and grill for 5-10 minutes until crispy and caramelized.
  6. Serve: Let the wings rest for 3 minutes, then serve with celery sticks and your favorite dipping sauces.
