  • 8 ounces Penne Pasta or linguine or fettuccine
For the Shrimp
  • 1 pound Shrimp fresh or thawed frozen
For the Sauce
  • 4 tablespoons Unsalted Butter or salted butter
  • 4 cloves Garlic minced
  • 1/4 teaspoon Red Pepper Flakes adjust for spice preference
  • to taste Salt
  • to taste Pepper
For Brightness
  • 2 tablespoons Fresh Lemon Juice or vinegar
  • 2 tablespoons Fresh Parsley chopped
For Serving
  • 1/4 cup Grated Parmesan Cheese or vegan substitute

Method
 

Cooking Instructions
  1. Bring a large pot of salted water to a boil. Add penne pasta and cook according to package instructions until al dente. Drain, reserving ½ cup of pasta water.
  2. Pat the shrimp dry with paper towels and season with salt and pepper.
  3. Melt unsalted butter in a skillet over medium heat, add minced garlic and red pepper flakes; sauté for 1-2 minutes until fragrant.
  4. Add seasoned shrimp in a single layer, cooking for 2-3 minutes on each side until pink and opaque.
  5. Reduce heat and add the drained penne, reserved pasta water, and fresh lemon juice; toss to combine.
  6. Sprinkle with parsley and adjust seasoning before serving hot, topped with grated Parmesan.
