Cooking Steps
- Pat the salmon fillets dry with paper towels and season with salt and pepper.
- Heat olive oil and butter in a large skillet over medium-high heat until shimmering.
- Place salmon fillets skin-side down in the skillet and cook for 6–7 minutes.
- Remove salmon and sauté garlic and sun-dried tomatoes for 30 seconds.
- Deglaze the pan with white wine and simmer for about 5 minutes.
- Stir in heavy cream and Parmesan until smooth.
- Add spinach and fold in the salmon, spooning sauce over it.
- Allow to simmer for about 5 minutes until salmon is cooked through.
- Transfer to plates and drizzle with remaining sauce.

Pat the salmon dry for a perfect sear. Use freshly grated Parmesan for best results.
