Method
 

Cooking Steps
  1. Pat the salmon fillets dry with paper towels and season with salt and pepper.
  2. Heat olive oil and butter in a large skillet over medium-high heat until shimmering.
  3. Place salmon fillets skin-side down in the skillet and cook for 6–7 minutes.
  4. Remove salmon and sauté garlic and sun-dried tomatoes for 30 seconds.
  5. Deglaze the pan with white wine and simmer for about 5 minutes.
  6. Stir in heavy cream and Parmesan until smooth.
  7. Add spinach and fold in the salmon, spooning sauce over it.
  8. Allow to simmer for about 5 minutes until salmon is cooked through.
  9. Transfer to plates and drizzle with remaining sauce.
