Preparation
- In a mortar, combine 2 cloves of minced garlic with a pinch of sea salt and 2 tablespoons of chopped parsley. Mash these ingredients together until a smooth paste forms. Gradually mix in 2 tablespoons of extra virgin olive oil.
- In a large fry pan, pour in 1/4 cup of extra virgin olive oil and warm it over medium heat until it shimmers.
- Thinly slice the remaining 4 cloves of garlic and add them to the hot oil, stirring for about 30 to 45 seconds until they turn golden brown.
- Carefully crack 2 eggs into small bowls and slide them into the hot skillet. Lay the fried garlic slices over the eggs and fry for about 1 to 2 minutes.
- Remove the first batch from the pan and repeat the process with the remaining eggs.
- Plate the fried eggs and season with sea salt and black pepper. Drizzle with the parsley-garlic sauce before serving.
