Dough Preparation
- In a large mixing bowl, combine lukewarm water, lukewarm milk, and honey. Sprinkle in instant yeast and let it sit for 5 minutes until frothy.
- Add beaten egg, sunflower oil, all-purpose flour, and salt. Melt butter, pour it in and mix until a dough forms. Knead for 10-12 minutes until smooth. Cover and let rise for 1 hour.
Topping and Chicken
- Combine Parmesan cheese, cayenne powder, onion powder, and black pepper in a bowl to create the topping.
- Cut chicken filet into bite-sized pieces; marinate with salt, sambal oelek, and soy sauce for 1-2 hours. Refrigerate to enhance flavor.
Bun Assembly
- Punch down risen dough, divide into 14 pieces, roll each into a rectangle, and fold in half.
- Brush dough with milk, dip in Parmesan mixture, and place on a lined baking sheet. Let rise for 30 minutes.
- Preheat oven to 200°C (392°F). Bake buns for 12-15 minutes until golden.
- Mix cornstarch with salt, onion powder, and black pepper. Coat marinated chicken and fry until golden and cooked through.
- Prepare sauce by whisking mayonnaise, chili sauce, and sambal oelek.
- Assemble buns with fried chicken, veggies, and sauce. Serve warm.
