  • 1 medium Onion Diced; or use onion powder.
For the Cauliflower Rice
  • 2 cups Cauliflower Rice Fresh works better than frozen.
For the Fresh Toppings
  • 1 whole Lime Juiced; lemon can be used as a substitute.
  • 1 bunch Cilantro Chopped; parsley can be used instead.
  • 1 cup Mixed Veggies Cabbage, bell pepper, corn or shredded carrots.
For the Sauce
  • 1 cup Greek Yogurt Can use dairy-free yogurt as an alternative.
  • 1 whole Lime Juiced for the sauce.
  • 1 dash Hot Sauce
  • 1 pinch Salt

Method
 

Step-by-Step Instructions
  1. In a small mixing bowl, whisk together Greek yogurt, lime juice and zest, a splash of hot sauce, and a pinch of salt. Thin with water if desired. Refrigerate to chill.
  2. Heat a large skillet over medium-high heat, add oil, then crumble in ground beef. Cook undisturbed for 3-4 minutes until browned. Stir in chili blend and cook for 1 additional minute.
  3. In another skillet, heat oil over medium, add cauliflower rice and minced garlic, stirring occasionally for 5-7 minutes until tender but still slightly crispy.
  4. Assemble bowls by dividing cauliflower rice, top with beef mixture, and add toppings. Drizzle yogurt-lime sauce over and sprinkle with cilantro.
  5. Serve immediately for the best flavor and texture.
