Step-by-Step Instructions
  1. Start by heating 2 tablespoons of olive oil in a large skillet over medium-high heat.
  2. Add your sliced cooked sausage into the skillet and sauté for about 5 minutes until browned.
  3. In the same skillet, toss in the chopped onion and red bell pepper; cook for about 4 minutes until softened.
  4. Add the minced garlic and sauté for another 30 seconds, then set aside with the sausage.
  5. Add the chopped zucchini to the skillet and sauté for about 5 minutes until golden.
  6. Stir in the corn kernels and heat for an additional 2 minutes.
  7. Return the browned sausage and sautéed vegetables to the skillet; stir gently.
  8. Season with kosher salt, black pepper, and optional red pepper flakes.
  9. Sprinkle basil over the mixture and stir for 1-2 minutes before serving.
