  • 0.5 cups Cream, e.g., half and half Can substitute with light cream

Equipment

  • Medium saucepan
  • Fine Mesh Sieve

Method

Step-by-Step Instructions
  1. In a medium saucepan, combine 1 cup of warm water with ¾ cup of granulated sugar, stirring until fully dissolved. Add 1 ½ cups of chopped fruit and bring to a gentle boil for about 1 minute.
  2. Lower the heat and let it simmer for 20 minutes, stirring occasionally until the syrup thickens and becomes vibrant in color.
  3. Remove from heat and strain the fruit mixture through a fine-mesh sieve into a bowl, discarding the solids to leave only the syrup. Allow the syrup to cool completely for about 15-20 minutes.
  4. Fill a tall glass with ice cubes. Pour 4 tablespoons of the cooled fruit syrup over the ice. Slowly add club soda or carbonated water, filling the glass until it's about ¾ full.
  5. Top off with a splash of cream (about ½ cup) and gently stir to mix. Serve immediately with colorful straws.
