Method
 

Step-by-Step Instructions
  1. Bring 4 cups of water to a rolling boil in a medium-sized pot over high heat.
  2. Add 1 cup of dried hibiscus petals and 1-2 slices of fresh ginger. Reduce heat to low and let it steep for 15-20 minutes.
  3. Remove from heat and mix in honey or maple syrup, tasting and adjusting sweetness.
  4. Strain the mixture into a pitcher using a fine mesh strainer, then let it cool to room temperature or chill in the refrigerator.
  5. Serve over ice and garnish with lime wheels.
