  • 12 oz Spaghetti or any pasta variety
For the Sauce
  • 2 tbsp Oil (from sun-dried tomatoes) or olive oil
  • 1 medium Onion finely chopped
  • 3 cloves Garlic minced
  • 1 lb Ground Pork or beef; substitute with lentils for vegetarian option
  • 2 tbsp Tomato Paste no direct substitute
  • 28 oz Puréeed Tomatoes or crushed tomatoes
  • 1 cup Sun-Dried Tomatoes sliced, no oil
  • 1/2 cup Red Pesto main ingredient
  • 1/2 cup Whole Milk or heavy cream for richness
  • 1/4 cup Chopped Parsley for garnish
  • 1/2 cup Grated Parmesan for serving
  • to taste Salt
  • to taste Black Pepper
  • 1 tsp Sweet Paprika
  • 1 tsp Dried Oregano
  • 1 tsp Dried Sage
  • to taste Crushed Red Pepper Flakes

Method
 

Preparation
  1. Finely chop the onion, mince the garlic, and slice the sun-dried tomatoes.
Cooking
  1. Heat the reserved oil from the sun-dried tomatoes in a pot over medium heat.
  2. Sauté the chopped onion and minced garlic for about 3 minutes until fragrant.
  3. Add ground pork (or beef) and cook until browned, about 5 minutes.
  4. Stir in tomato paste, seasonings, and puréeed tomatoes; bring to a boil then simmer for 10-15 minutes.
  5. While sauce simmers, cook spaghetti in a large pot of salted water until al dente, about 8-10 minutes.
  6. Mix in red pesto and whole milk to the sauce; simmer for an additional 5 minutes.
  7. Toss cooked spaghetti with the sauce and garnish with grated parmesan.
