Step-by-Step Instructions
  1. Begin by rinsing the vine-ripened tomatoes under cool water and slice them into 1/3-inch thick rounds.
  2. Season the sliced tomatoes lightly with sea salt and freshly ground pepper.
  3. Combine diced small red onion, chopped fresh basil, parsley, and minced garlic in a bowl.
  4. Add olive oil, red wine vinegar, lemon juice, and honey, then whisk until well blended.
  5. Drizzle the marinade over the sliced tomatoes and gently toss to coat.
  6. Cover the dish and refrigerate for at least 1 hour, preferably 2 to 4 hours.
  7. Serve the marinated tomatoes at room temperature for the best flavor.
